The Prima 120 is our Estate Level oven with a full 48" cooking surface - the choice for serious entertainers and serious chefs. The generous cooking surface can accommodate any menu yet is still not over-the-top for the serious foodie. Like our Prima 100, this commercial grade oven offers extra thermal mass due to the thicker dome and corresponding thicker floor which will pay dividends when used for multiple days.
With practice, start up time is only 1 1/2 hours but it does use more wood than smaller ovens. The efficient footprint makes the Prima 120 a reasonable installation with the option of factory assembled models requiring approximately 5' of space. The Prima 120 is the choice of celebrity chefs and restaurants worldwide like Guy Fieri, Mario Batali, Emeril Lagasse and Chez Panisse! There is no finer kitchen appliance made!
