Andrea Mugnaini specified this commercial grade oven sized especially for the American home chef. Manufacturers never thought to make a smaller home sized commercial oven - one with a thicker dome and corresponding thicker floor. Now homeowners can have the benefits of large thermal mass without heating a large oven.
The Prima 100 is a great all around oven size able to accept any cookware and with a deep heat that maintains consistent temperatures for hours. The balanced thermal mass is the key as it will take only 1 1/2 hours to heat but that deep heat is ideal for bread bakers and foodies who may find themselves cooking all day or several times a week. Start up times are shortened with back to back usage due to the retained heat. If overall size is an issue think about using our factory assembled models that only require 4 1/2' of space.
